On Saturday I was craving something tasty. I wanted a snack and nothing in my fridge or pantry sounded good. Then I remembered I had some goat cheese in my fridge. Light bulbs in my brain started lighting up and this Goat Cheese Pesto Dip recipe was born! It is so easy and only takes a few minutes to put together. It’s amazing what I think up when I’m hungry.
I heated some olive oil in a skillet. I cut a bunch of grape tomatoes in half and tossed them in. While the tomatoes were cooking I combined the goat cheese and pesto in a bowl. Once the tomatoes were cooked to my liking I added them to the bowl. Mixed everything up and my tasty dip was ready! I had a French loaf so I cut some slices, drizzled them with EVOO, and baked them for a few minutes until crispy. It was the perfect compliment to my dip.
Goat Cheese Pesto Dip
1 cup sliced grape tomatoes
1 tbsp olive oil
3 oz goat cheese
2 tbsp pesto
bread, chips, crackers, whatever your fancy for dipping
Heat olive oil on medium heat. Toss in sliced tomatoes until they are soft about 4 minutes. While the tomatoes are cooking combine goat cheese and pesto in a bowl. Once the tomatoes are done pour them into the bowl with your goat cheese and pesto mixture. The warmth of the tomatoes will help combine everything. Serve and enjoy immediately.
This recipe makes enough for 1-2 people. You can always double or triple the ingredients if you will be entertaining more people.
