Do I have a treat for you today! This Sausage and Rotel pasta dish is a huge hit in our house. You want to know the best part? It’s a one pot dish! Those are my favorite because they are so easy to clean up. I am all about easy dinner cleanup. This is a feel good meal and crowd pleaser. It is a bit on the spicy side so just a word of caution in case spicy is not your thing.
The ingredient are pretty simple. I went the organic route. Feel free to change up the ingredients to suite your taste and shopping style. Cooking is not an exact science. I will give you measurements but I like to go by taste. This dish may also come out a bit different every time. To me, that’s the beauty of cooking.
Start by heating the coconut oil on medium in a skillet. Saute the garlic and onion a few minutes. Your nose will tell you when it’s done. Don’t you just love the smell of garlic and onion on the stove?! Next, add your sausage. Cook until it warmed through. Add the can of rotel. Add in the pasta. Pour in the chicken broth until the pasta is submerged. Turn the heat to medium high. Cook until the pasta is tender. You can cover with a lid to speed up the process. Once everything is cooked sprinkle cheese on top and let it melt. Serve immediately and enjoy!
- 2 tbsp coconut oil
- 1 small onion diced
- 1 tsp minced garlic
- 1 pkg smoked sausage sliced
- 1 can Rotel
- 12 oz pasta
- 2 cups chicken broth
- salt & pepper to taste
- 1/2 cup shredded cheese
- Heat coconut oil in skillet on medium heat. Saute onion and garlic until fragrant about 4 minutes. Add smoked sausage and cook until heated through about 5 minutes. Add rotel, dry pasta, and chicken broth until the pasta is submerged. Simmer on medium high heat until most of the liquid is absorbed about 20 minutes. Add salt and pepper to taste. Sprinkle on cheese and let it melt. Serve immediately and enjoy!
