Ok back to the recipe. You only need a few simple ingredients. You will need frozen cherries. I opted for the sweet cherries so that I can omit sugar. If you would rather use tart cherries and sweeten to your taste with sugar, go for it. You will also need cornstarch, butter, shortbread cookies, almonds, and your favorite ice cream.
Start by adding the cherries to a skillet on medium high heat. Add cornstarch and heat until the mixture is bubbling. The cornstarch helps to thicken up the juice in the cherries. It will make a ooey gooey cherry mixture.
While the cherries are doing their thing on the stove it’s time to prepare the cookie crumble. I used shortbread cookies. You are going to crumble them up, add melted butter, and almonds. Mix it up and you have your cookie crumble.
Now you are going to layer everything in the dish. Start with the cherries on the bottom. The cookie crumble goes in the middle. Then top with your favorite ice cream. I used black cherry chip ice cream. It pairs perfectly. And you have your cherry cookie crumble sundae.
