When entertaining I like quick and easy dishes that taste like they took hours to make. As the holidays approach the time crunch is on. I have mastered a one pot pasta dish that tastes delicious. Your guests will think you slaved all day in the kitchen. I call it Skillet Penne & Tomatoes. It is one of my favorite dishes to make. I use it for entertaining quite often.
I recently discovered Barilla Pronto Pasta at Walmart. Have you tried it yet? It is life changing. It takes my easy one pot pasta dish and makes it even easier to prepare. No one will believe that you made everything in one pot. I love that you just toss the pasta into a pan with water or broth, turn up your heat, and in minutes you have perfectly cooked pasta. Barilla Pronto Pasta comes in Spaghetti, Penne, Rotini, Elbows, Linguine — pair it with Barilla Pasta Sauce for a delicious dinner.
To pair with my pasta dish I grabbed a bottle of Mark West Wine Pinot Noir. You cannot beat the price point and it definitely over delivers for the price. Walmart offers a great selection of super premium wines at a great price. For a quick and easy dessert I picked up a box of Pepperidge Farm Classic cookies. These cookies are delicious. They are great for entertaining. Keep a box or two on hand for when guests pop in this holiday season.
So let’s get to my one pot pasta recipe. You will need Pronto Barilla Penne Pasta, chicken stock, chicken breast, sausage, onion, peppers, canned tomatoes, and Italian Seasoning. It is so simple. Everything goes in one skillet. I will list measurements for you but when cooking adjust with your taste.
- 1 tbsp Olive oil
- 1 chicken breast cubed
- 8 oz Italian Herb smoked sausage
- 1 box Barilla Pronto Penne Pasta
- 1 can diced tomatoes
- 3 cups chicken stock
- 1/2 of an onion sliced
- 1/2 yellow pepper sliced
- 1/2 orange pepper sliced
- 2 tbsp Italian seasoning
- 1/4 cup Parmesan cheese
- salt & pepper to taste
- Heat oil on medium in a skillet. Cook chicken fully until no pink remains. Add chicken stock and the Pronto pasta. Turn heat up to high and let cook for 10 minutes. Turn heat back to medium and add tomatoes, onion, and peppers. Stir to combine. Add the sausage, Italian seasoning, salt, and pepper. Make sure all ingredients are well combined. Turn heat down to low and cook for another 5 minutes to let all the flavors come together. Mix in the Parmesan cheese and reserve a little to sprinkle on top. You can serve straight from the skillet or transfer to a serving dish.
