I’ve missed all my fellow Health & Fitness ladies! As some of you know I was on a month long vacation. I did a few workouts here and there. I did not watch what I ate at all. I took full advantage of all the tasty Midwestern foods that I don’t get here in Florida. With that said I’ve gained a couple pounds. Yesterday I got back to my fitness routines and my healthy eating. Mud Endeavor is next Saturday.
Today I want to share a quick and easy clean brownie recipe for you. Yes, healthy brownies that taste good! While perusing Instagram (you can follow me @jvkom) my friend posted a picture for Avocado Chocolate Chip Protein Brownies. I had to have the recipe. Cary is a fitness fanatic. Her body is banging and her personality is even better. She made up the recipe herself. With her permission I am sharing it with all of you.

Avocado Chocolate Chip Protein Brownies
1 egg (I used liquid egg whites)
1 very ripe avocado
vanilla stevia (I used about 8 drops)
tsp baking soda
1/2 cup flour (you can use any flour you want, Cary uses gluten free garbanzo bean & coconut flour)
1 scoop vanilla protein powder
chocolate chips (add as many as you like. Cary uses vegan sugar free chips)
Mix everything together. Make sure to get any lumps out of the avocado. Then pour the batter into a baking dish. I used a glass 8×8 inch glass dish and spread coconut oil on the bottom to prevent sticking. Then bake at 350 degrees for 15-18 mins. The shorter amount of time you bake them the softer they will be. Let them cool and then cut into squares. I get about a dozen out of this. Enjoy!
These are such a big hit in our house. I told the wilds they were Hulk cookies because they are green. They liked them so much they are asked for seconds and thirds! We finished off the first pan in record time..oops.
