As far as healthy eating I’ve been back to it! I slacked a bit the last couple of weeks my mom was here. She ended up hurting her shoulder so we had to jump off the workout train. And who cares right?! She was on vacation so we enjoyed ourselves. For the most part we cooked healthy meals. But as I’ve said before I’m a snacker. Guess where I get that. Yep, she get it from her mama.
This week it’s been all about fresh veggies. I have been using up what I have in the fridge. Just throwing together this or that. I’m loving it! I’m on a Chipotle inspired salsa kick. Super easy. Chop up a tomato, some onion, and bell peppers. Mix that with some corn, black beans, cilantro, salt, and lime juice. A completely clean dish and it is soo yummy! You can eat it with tortilla chips, chicken, whatever your fancy. I even ate it with fish for lunch.
I started taking my bee pollen again. I had taken a break because of my blood pressure scare. I can definitely tell a difference. I have more energy and it’s much easier for me to get up in the mornings. I also need to start drinking organic apple cider vinegar again. I just need to find a way to get past the taste. I’ll get there. Gotta get back to my routines.
