Now for the yummy recipes I promised you last week. I'm having so much fun trying out new healthier recipes. Most of them have been big hits around here. I love to cook. We rarely go out so having some new recipes added into mix helps keep things fresh. All these recipes I found on pinterest.
Roasted Egg Plant Parmesan w/ Feta Chesse - This one is so easy and so good. Now I did not try this one on the family. There is no way John will ever eat this. I tried it when my cousin was visiting. She loved it as much as I did.
Cajun Chicken stuffed with Cheese & Spinach - This one was also pretty easy and the flavors were outstanding. Even John liked this. He does not eat spinach but he did this time. I made this with Twice Baked Cauliflower. All I can say is wow. John even ate it. I'm not sure he has ever had cauliflower in this life.
My favorite new recipe is Mexican Stuffed Peppers w/ Black Beans & Quinoa - I love this Mexican twist on traditional stuffed peppers. Even Nathan really liked this recipe. So good and good for you.
My pictures do not do justice. Check out the links for much prettier pictures.It makes me feel great that I am making such healthy meals for my family. Healthy doesn't always just have to be a salad. I'm excited to keep experimenting and seeing what creations I can up with.

oh, this post makes me want to eat - more than to exercise, which i supposed to do after all that calories i ate. haha
